Warm Roasted Apple & Vanilla Bean Ice Cream

* All ingredients can be found at Market 17

Ingredients needed for one roasted apple (serve one apple per guest):

1 Royal Gala apple

3 tsp of honey (When baking, I recommend using a flower honey like Acacia honey, found at Market 17)

3 tsp brown sugar

1 whole cinnamon stick

1 star anis       

1 clove
 
Loads of BUTTER! Approx. 1 1/2 tbsp though the secret of French cooking is always using more butter.

Core the apple and cut the bottom to make it even. Stab the skin with a fork (if you don't the skin will crack)

Put the apple in a oven pan

Cover the apple with honey, then grate a little bit if the cinnamon stick on top

Stick the clove in the middle of the apple, stick the cinnamon stick and anis star into the top of the apple (the placement does not need to be precise)

Sprinkle on the brown sugar (make sure you get it around the whole apple, the sugar will stick onto the honey nicely)

Place butter right on top of the apple and bake it for 45 min at 180 °C. Serve with Vanilla bean ice cream.
  
2010 Marcarini Moscato do Asti $18.95. Low in alcohol ( only 5%) with a little prickle on the tongue. Sweet enough to finish the evening or dance nicely with the baked apples!
