Chef Dominique Moussu, Cassis Bistro's Executive Chef, hails from Brittany, France where he apprenticed at a Michelin star restaurant after graduating from the Brevet d'Etudes Professionelles. Moussu’s career took him all over Europe, cooking in top luxury hotels including The Savoy in London. Moussu was also Executive Chef and Managing Partner at Teatro in Calgary before opening two other Calgary favourites: L'Epicerie, and Le Petit Mousse creperie.
Much of our menu is prepared with ingredients from the fresh organic produce and meat at Market 17 (our neighbours here in Casel Marché), which means it is always fresh, always seasonal and most often from our local farmers and ranchers.
We also work exclusively with J. Webb Wine Merchant, another neighbour of ours in Casel Marché, building our ever-changing wine menu through their excellent selection of quality hand picked wines from sustainably managed vineyards throughout France.
